Head Chef Jakob Mathiasson describes the restaurant's philosophy: "As proud members of Taste of Dalarna, we love local food. We have chosen to work with Swedish food producers, preferably from Dalarna and surrounding areas. All our beef comes from local farms in and around Dalarna, produced responsibly. We adore Swedish vegetables and adapt our menu according to availability and season. We also take pride in sourcing ingredients from people we know and with whom we have built strong friendships. With this approach, our menu may change at any time—some dishes might only be available for a short period, while others may disappear and return depending on what our producers have available. But it’s worth it, as our collaboration ensures that only the best products reach your plate. Our goal is to create a sustainable and delicious menu that honors the craftsmanship of farmers across Sweden. To top it off, we add flavors from all over the world."
